Directions:
Prepare the Chicken
- To begin, season the chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
- Next, heat the olive oil in a skillet over medium heat. Once the oil is hot, carefully add the chicken breasts to the skillet.
- As the chicken cooks, ensure it browns on both sides and is cooked through, which should take about 7-8 minutes per side. After the chicken is fully cooked, remove it from the skillet and set it aside.
Make the Cheese Sauce
- In the same skillet, start by melting the butter over medium heat. As the butter melts, gradually whisk in the flour until the mixture becomes smooth.
- After the flour is fully incorporated, slowly pour in the milk, whisking continuously to avoid any lumps. Continue whisking until the mixture begins to thicken, which should take a few minutes.
- At this point, reduce the heat to low and stir in the shredded cheddar cheese along with the chopped green chiles. Keep stirring until the cheese is fully melted and the sauce turns smooth.
- Finally, season the cheese sauce with salt and pepper to taste, adjusting as needed.
Serve
- To assemble the dish, place the cooked chicken on a serving plate. Then, pour the cheese sauce generously over the chicken, ensuring each piece is well-coated.
- For an added burst of flavor, garnish with chopped cilantro, sliced jalapeños, and diced tomatoes before serving.
