Ingredients:
For the Chicken:
- Chicken breast cutlets, sliced thin or pounded thin
- 1 cup seasoned breadcrumbs
- 1 cup shredded and grated Parmesan cheese
- 1 cup flour
- 2 eggs, whisked
- 1 teaspoon poultry seasoning
- 1 teaspoon lemon pepper seasoning
- Oil for frying
- 2 tablespoons butter
For the Salad:
- Romaine lettuce, chopped
- ½ cup shredded Parmesan cheese
- Fresh ground black pepper, to taste
- Caesar dressing, to taste
For the Sub Roll:
- Sub rolls or your favorite bread
- 2 tablespoons butter, melted
- 1 tablespoon olive oil
- 1 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon oregano
- 1 teaspoon garlic powder
Directions:
Prepare the Chicken
- Begin by mixing the seasoned breadcrumbs with the shredded and grated Parmesan cheese on one plate. On a second plate, place the flour, and in a shallow dish, whisk the eggs together.
- Afterward, season both the flour and breadcrumb mixture with poultry seasoning and lemon pepper.
- Next, coat the chicken cutlets by first dipping them in the flour, then in the whisked eggs, and finally, coating them with the breadcrumb-Parmesan mixture.
- Following this, heat oil and butter in a skillet over medium heat. Carefully fry the chicken cutlets for 3-4 minutes on each side, or until they are crispy and light brown. Once done, remove the cutlets from the pan and set them aside.
Prepare the Caesar Salad
- Meanwhile, in a large bowl, toss the chopped romaine lettuce with shredded Parmesan, plenty of fresh ground black pepper, and your favorite Caesar dressing. Set this aside while you prepare the sub rolls.
Prepare the Sub Roll
- Next, preheat the oven to 350°F (175°C). In a small bowl, combine melted butter with olive oil, black pepper, grated Parmesan, oregano, and garlic powder. Then, brush this mixture inside and outside of the sub rolls.
- Place the rolls in the oven and warm them for about 5 minutes until they become slightly crisp.
Assemble the Sub
- After preparing all the components, assemble the sub by placing the fried chicken cutlets on the prepared sub rolls, and then topping them with the Caesar salad mixture.
